For 6 cups
Ingredients: 600 g of filtered water at 93° for 36 g of coffee
Open a coffee filter CHEMEX ® shaped like a cone so that one side of the cone has three layers, and place it in the top of the CHEMEX infuser ®. The thick part (three layers) should cover the spout.
Make a pre-infusion by pouring 60 g of water then let infuse for 30 seconds.
Put the water in several times (30 to 40 g for each pouring) by a circular movement from the center towards the filter towards the wall and come back towards the centre.
Once the desired amount of coffee is brewed, remove the filter with spent grounds from the infuser and discard.
